It’s like branding or PR: the company wants to project a certain ambiance or image to its customers. It’s just like the decorations that they choose or the lighting or the color scheme. In most places, servers are also supposed to wear a certain uniform. It all relates to the same end goal of the organization.

You can argue all you want about why it matters, or Just a unicorn with tattoos shirt. But all it really comes down to is the legal right of the business owners to require certain behaviors of the people they choose to hire. As I write this though, I find myself wondering if there are laws referencing discrimination based on visible body modification. If you have a neck tattoo, for instance, can you sue a company based on discrimination for not getting a job that you were well equipped for otherwise? That make for an interesting point, but one that I won’t attempt to delve into now. Though I imagine there are some local laws to that effect.
